Sri Lankan Fish Rolls Recipe | Crispy Tea-Time Snack

Sri Lankan fish rolls are a popular crispy tea-time snack with a savoury filling.
Ingredients
The Filling
250g canned tuna (or boiled & flaked firm white fish)
1 medium onion, finely chopped
1-2 green chillies, finely chopped
1 tsp ginger & garlic paste
½ tsp Turmeric Powder Add To Cart
½ tsp Pepper Crushed Add To Cart
½ tsp Chilli Flakes Add To Cart
1 tbsp oil
A few curry leaves, finely chopped
Salt to taste
Juice of ½ lime
For the Pancake Wrap
1 cup all purpose flour
1 egg
1 cup milk (or water)
¼ tsp salt
¼ tsp turmeric powder
For Crumbing & Frying
1 egg beaten
Fine breadcrumbs
Oil for deep frying
Method
Begin the Preparation
Evening settles in as the couple steps into the kitchen, ready to prepare a simple snack for tea

Prepare the Filling
Heat oil in a pan. Add onions, chillies, and curry leaves. Cook until soft.
Add ginger and garlic paste and spices. Stir well.
Add tuna and mix everything together. Season with salt and lime juice.
Turn off the heat and allow the filling to cool.

Make the Pancakes
Whisk flour, egg, milk, salt, and turmeric into a smooth batter.
Heat a lightly greased pan.
Pour a thin layer of batter and swirl it evenly.Cook lightly without browning.
Stack the pancakes and keep them covered.

Assemble and Bread the Rolls
Place some filling on each pancake. Fold and roll into neat parcels
Dip each roll in beaten egg. Coat evenly with breadcrumbs

Fry the Rolls
Heat oil in a deep pan.
Fry the rolls until golden brown and crisp.Remove and drain excess oil.


Serve and Enjoy
Remove the rolls from the oil and drain excess oil.
Serve them hot with a cup of tea.
Enjoy them fresh at home, shared with family or during a simple tea time.
To Serve
Serve hot with chilli sauce, tomato ketchup, or Sri Lankan mustard sauce, alongside a cup of milk tea.
