Sri Lanka Muslim Nombu Kanji Recipe

Nombu Kanji holds a special place in Muslim communities, born from the need to gently break a long day of fasting during Ramadan. In the early days, people understood that after hours without food or water, the body needed something soft, warm, and nourishing not heavy food, but a drink that could restore strength slowly. That is how Nombu Kanji began.

Over time, it became richer and heartier. Traditionally, it includes broken wheat (கோதுமை) along with rice, and most authentically, beef with bone. Cooked in large pots at palli (mosques) and homes, it was made not just for families, but to be shared with neighbours and anyone who came for iftar.

Slow cooked for hours, the grains break down until the kanji becomes silky and thick, meant primarily to be drunk, not eaten. While some may eat it with a spoon and others drink it, the true way to enjoy kanji is to sip it slowly from the bowl, allowing the warmth and nourishment to settle gently into the body. The wheat gives body, the beef gives depth, and the coconut milk softens everything into a comforting warmth after a long fast. Carefully balanced Rasa Padhama spices fill the air, and the aroma becomes unmistakably Sri Lankan, signalling that the fast is about to open.

What began as a simple, caring solution has remained a timeless tradition: a nourishing drink, shared with generosity, carrying the spirit of Ramadan in every cup.

Ingredients:

– ¼ cup raw rice
– ¼ cup broken wheat (கோதுமை)
– 250 g beef (with a little fat & bone for flavor)
– 1 medium onion (sliced)
– 2 cloves garlic (crushed)
– Small piece ginger (crushed)
– 1 green chilli (slit)
– Curry leaves
– Pandan leaf
– Salt to taste
– 4 cups water
– 1 ½  cup thin coconut milk
– 1 cup thick coconut milk
1½ tsp Coriander Powder Add To Cart
1 tsp Cumin Powder Add To Cart
1 tsp Pepper Crushed Add To Cart
1 tsp Turmeric Powder Add To Cart

Preparation:

Adults Zone:
– Wash rice and wheat thoroughly.
– Cut beef into small even cubes. (Fat and Bone also)
– Control slow simmering process.
– Balance thickness and seasoning.

Kuttys Zone:
– Measure Rasa Padhama spices into bowls.
– Wash curry leaves and pandan leaf.
– Help stir gently when heat is low.
– Arrange dates, drinks, and snacks on the floor spread.

Cooking Time

Adults Zone:
– In a deep pot, add beef (Fat and bone) with water and boil until slightly tender.
– Add rice, broken wheat, onion, garlic, ginger, curry leaves, and pandan.
– Add Rasa Padhama turmeric, coriander, cumin, pepper, and salt.
– Simmer slowly, stirring occasionally to prevent sticking.
– Once grains are soft and mixture thickens, add thin coconut milk.
– Continue simmering until creamy and smooth.
– Add thick coconut milk at the end cook gently without boiling hard.
– Adjust salt and consistency (kanji should be velvety and slightly thick).

Kuttys Zone:
– Stir gently during final stage.
– Help garnish with fried onions.
– Serve bowls carefully around the floor spread.
