Roast Lamb Recipe | Juicy and Flavorful Oven Roast

Ingredients

(Serves 5 – 6 people)

  • 2 – 2.5 kg lamb leg or lamb shoulder (bone‑in)
  • 4 tbsp olive oil
  • 5 – 6 garlic cloves, crushed
  • 2 tbsp chopped fresh thyme or rosemary
  • 1½ tsp salt
  • 1 lemon, juice only
  • 1 cup water

Roast lamb has always been food for gatherings.

Across Europe and the Mediterranean, lamb was reserved for days when families came together Sundays, festivals, long afternoons that moved slowly. A good cut of meat, simple seasoning, and steady heat were all that was needed.

Over time, different regions added their own touches herbs, garlic, olive oil but the heart of roast lamb never changed. Respect the meat. Cook it patiently. Let flavour develop naturally.

This is not everyday food. This is food with presence.

Method

1. Prepare the lamb

Remove the lamb from the refrigerator at least 30 minutes before cooking. Pat dry.

2. Season

Mix olive oil, garlic, rosemary, salt, pepper, and lemon juice. Rub this mixture generously all over the lamb, massaging it into the meat.

3. Set the tray

Place the lamb on a roasting rack or directly in a deep roasting tray. Pour water or stock into the bottom of the tray.

4. Roast slowly

Roast in a preheated oven at 180°C for 1 hour 30 minutes (medium), basting occasionally with pan juices.
Cover loosely with foil if the top browns too quickly.

5. Rest the meat

Remove from oven and rest, covered loosely with foil, for 15 minutes before carving.

Serve warm.

How to Serve

Roast lamb stands strong on its own.
But it is traditionally served with:

  • Roasted potatoes or mashed potatoes
  • Steamed vegetables
  • Fresh salad or gravy from pan juices

Nothing rushed. Nothing crowded.
Let the lamb lead the table.

  • Add a little crushed black pepper and garlic paste for bolder depth
  • Rub with a touch of curry powder (very lightly) before roasting
  • Serve with rice or string hoppers instead of potatoes
